Ugh, traffic court.
Today Johnee' had traffic court for an HOV-3 violation. No, no, no..she wasn't trying to skip traffic for a stealthy RAW! delivery, but rather while leaving a delivery at a construction-filled commuter lot, we made a wrong turn heading back to the kitchen. There were jam packed cars, construction, cones, 'new traffic pattern' signs everywhere which we proceeded to follow. This led us right onto the HOV ramp (at 6:30 am; prime rush hour in the DC area) where we were greeted by 2 state troopers who didn't buy our 'lost' story and proceeded to ticket us.
So here we are today.
This morning went quicker than expected and we didn't have time for our usual morning workout, which led to a skipped breakfast too.
While holding the RAW! fort down while she attended court, my stomach growled from this morning's missed meal. I headed to the kitchen for a quick and impulsive bag of raisins and sunflower seeds (my guilty raw snack). After jiggling the bag to mix its contents - I knew I could do better than that. Get creative!
I eyed some apples, 1 remaining ripe banana, and I knew we had some Thai coconuts in the fridge, and an array of superfoods. Hmm..how about some kind of cereal? Johnee' would really appreciate this when she gets back, I thought. She's always preparing food and I figured I'd surprise her with a tasty improvised breakfasty-brunchy treat.
Johnee' came back in to the RAW! kitchen ecstatic because she beat the case! BUT, she somewhat spoiled the surprise by going straight for the fridge. I quickly got over it because the cereal was sooo tasty! The coconut-cacao blend tasted like liquid white chocolate and the raisins were plump and juicy from soaking in the coco-cacao mylk. Not to mention we were CHARGED afterwards. This held us for most of the day!
I was kind of just throwing it together as I went but this is the recipe to the best of my recollection. Haha.
Coconut-Cacao Superfood Cereal
Water from 2 young thai coconuts
meat from 1 thai coconut
1/4 cup raw cacao butter
1/4 cup raisins
1sp apricot seed powder
5 TB chia seeds
Seasonal Fruit 'Cereal'
1 1/2 sliced apples
1 sliced RIPE banana
1/4 cup raisins
handful of sunflower seeds
Cinnamon (however much you like)
Apricot seed powder (to your fancy)
Chaga Mushroom powder (as above so below)
1/4 tsp organic local raw honey (or coconut nectar) - to mix in dry ingredients
Blend all Mylk ingredients (minus the chia seeds) in a high speed blender until all ingredients have emulsified. If you have a Vitamix and you desire a slightly warm (but still raw!) cereal, run it for a couple minutes being sure to gauge the warmth as you go.
Mix in chia seeds after blending. Let sit or chill depending on your personal preference.
Meanwhile, cut and mix your cereal ingredients in a bowl. Feel free to experiment with other seasonal fruits such as grapes, pears, and persimmons. Even use whatever superfoods you like - maybe try cacao powder and moringa :)
Layer to perfection in a bowl or parfait cup beginning with the mylk and ending with the fruit.
Let it sit/chill to let the flavors marinate and to rehydrate the raisins.
